Buffalo Cauliflower Bites

Cauliflower is such a trend these days. There's cauliflower pizza crusts and gnocchi, so of course there has to be cauliflower buffalo "wings"! I'm obsessed with spicy food and put hot sauce on pretty much anything. I've been dying to try to make these and what better time than quarantine!


These buffalo bites are much healthier than the traditional ones because they're baked instead of being fried. They're extremely easy to make so let's get started!


1 head of cauliflower

1/2 cup flour of your choice

1/2 cup water

1 tsp garlic powder

1/2 tsp salt

1/2 tsp pepper

1/4 cup melted butter (optional but gives the sauce a thicker consistency)

2/3 cup hot sauce


Preheat your oven to 425 and line a baking sheet with parchment paper. Spray or brush the parchment paper with a cooking oil of your choice.


Cut the head of cauliflower into bite size florets. In a large bowl, combine your batter...flour, water, garlic powder, salt, and pepper. Whisk.


Add the cauliflower florets to the batter and make sure to coat each piece generously. Using a spatula for this works the best.


Put your coated cauliflower onto the baking sheet, making sure to spread them out in a single layer. Bake for 20 mins.


While your cauliflower is baking, you can get started on the buffalo sauce!


In a large bowl, combine the melted butter and hot sauce.


After 20 mins, take the cauliflower out of the oven and put it in the bowl of your buffalo sauce. Coat generously, again use a spatula.


Put the coated cauliflower back onto the baking sheet and broil for another 20 mins, making sure to flip them once halfway through.


You can serve them as "wings" with ranch or blue cheese, put them on top of a salad, or even in tacos! The possibilities are endless.
